The very simple reason we founded our company, is to seek, bottle, and distribute the truly traditionally extra virgin Olive Oil, of the finest qualities we could trace in the Hellenic territory.
We bring to your table a traditionally extracted extra virgin olive oil with no industrial process, so you can have the same taste as our ancestors had!
In the modern times many "standards" have been set to "define" the various qualities of olive oil. This company seeks throughout Greece, finds the best qualities of olives and uses the purest and best methods of olive oil extraction, bringing to you one of the best olive oil qualities to be found each year in Greece.
There is no way for us to try and either "purify" or "improve" or industrially process one of the characteristics of our bottled olive oil. You will buy and taste only the pure, naturally extracted olive oil each year.*
Our aim is to please you with the best possible quality of extra virgin olive oil.
The steps we take during the treatment of the Olive tree, the precious olives, are very similar to the ones our ancestors took thousands of years ago:
- First we separate leaves and other unwanted matter from the fruit.
- Traditional millstone only used to extract the Olive juice.
- The temperature never exceeds 27oC, as this would "burn" some of the precious, delicate ingredients found in the Olive oil.
- We make use only 5 from 50 layers of the filter in order to keep all the beneficial ingredients
- Finally, the Olive juice is poured into dark green glass bottles (as dark glass protects the Olive oil from denaturing).
* As a result of our strategy, we can not and will not guarantee that each year the olive oil offered will have the exact same characteristics in terms of taste, color etc, as it is impossible on an agricultural product each year to have the exact days of rain, sun and temperatures ! Despite any variations in olive oil's characteristics, we guarantee of its finest quality.
